Preserving what nature offers us

He is not a modern winemaker, the type who, sitting on his brand-new harvesting machine, uses fertilizers and chemicals, always seeking lower production costs to gain market share.

The one who never gets off his tractor, mechanizing every task to the extreme, working almost industrially, and producing a wine that tastes like all the others, diluting the uniqueness of flavor.

Biodiversity

Olivier Giroux has chosen a different path, one of producing wines with character, identity, and personality—true terroir wines. Nature is so perfectly designed that if we respect it, no two wines will ever be the same!

Reviving the soils

When the estate was purchased in 2002, it revealed a tremendous potential in its terroirs, but the soils were nearly dead. Ah... Mo*nto and its famous biodegradable Roundup, promoted through global advertising campaigns—remember the dog digging up its bone? Many winemakers were naive enough to believe the industrial claims of supposedly biodegradable glyphosates that would reduce the need for tractors to weed. Unfortunately, this caused significant damage to the soils and subsoils. After ten years of hard work to revive these soils, Olivier Giroux's role is to cherish this terroir heritage so it can be passed on in good condition to the next generation. And to achieve this, there is only one solution: organic viticulture.

Organic viticulture

Organic viticulture is about taking care of the vine, a living element, so that it remains healthy and strong by enhancing its natural defenses. This is in contrast to conventional viticulture, which aims to prevent the vine from getting sick through the use of chemicals and supplements.
A subtle difference, perhaps, but more importantly, a mindset.

As Antoine de Saint-Exupéry said, "We do not inherit the earth from our parents; we borrow it from our children."
